Antipasto Salad


Dressing:
In a blender mix:
1 bunch fresh basil stemmed (must be fresh)
1/4 C Red Wine vinegar
1 clove of garlic
1 teaspoon Dijon mustard
1/2 tsp salt
1/2 tsp pepper
3/4 C extra-virgin olive oil

Salad:
1 box Rotini noodles, cooked and cooled
1 C (or to taste) chopped hard salami
1 C (or to taste) chopped smoked turkey
1/4 C (or to taste) Asiago cheese
1/4 C (or to taste) Provolone cheese
2 (or to taste) tomatoes chopped
1/4 tsp salt
1/2 pepper

Pour dressing over salad, chill and serve.
